Spicy Shrimp with Trader Joe's Squiggly Knife Cut Noodle Bowl

Trader Joe's Argentinian Shrimp, Squiggly Knife Cut Noodles and Chili Crunch come together to create a quick and easy meal packed with a ton of flavor.

Ingredients
  

  • ¼ cup Soy Sauce
  • 1 tbsp light brown sugar
  • 1 tbsp Tahini
  • 1 tsp Sesame Oil
  • 2 tbsp Balsamic Vinegar or Black Vinegar
  • 1 tbsp Trader Joe's Crunchy Chili Onion
  • 2 Persian Cucumbers, thinly sliced
  • ½ cup Unseasoned Rice Vinegar
  • 1 ½ tsp Salt
  • 2 tbsp Corn Starch
  • 4 tbsp Vegetable Oil, divided
  • 8 oz Shiitake Mushrooms, sliced
  • 2 tbsp Shallot, finely chopped or Green Onions
  • 1 tsp Garlic, finely chopped or frozen cube
  • 1 tsp Ginger, finely chopped or frozen cube
  • ½ lb Shrimp, peeled and deveined thawed and patted dry
  • 4 packages Trader Joe's Squiggly Knife Cut Noodles or other dried Ramen noodles

Instructions
 

  • Whisk soy sauce, brown sugar, tahini, sesame oil, vinegar, chili crunch ,and ½ cup water in a small bowl or measuring glass until sugar is dissolved. Put aside.
  • Toss cucumbers, rice vinegar, and 1½ tsp of salt in a bowl to coat. Let sit, stirring every couple of minutes until cucumbers are softened and lightly pickled, about 10 minutes.
  • Add 2 Tbsp. vegetable oil to a skillet and reduce heat to medium. Add mushrooms and shallots and cook, stirring occasionally, until mushrooms are lightly browned and shallot is translucent, about 5 minutes. Season with salt and a little pepper. Add ginger and garlic and cook, stirring often, until fragrant, about 1 minute.
  • Add Shrimp to the pan and add reserved sauce and add the sauce packets from the noodles, bring to a simmer. Cook until sauce is slightly reduced and thickened, tossing shrimp until they are cooked through about 2 minutes. Remove from heat.
  • Cook noodles in a large pot of boiling water according to package directions. Drain and divide among bowls. Ladle saucy shrimp over noodles and top with reserved pickled cucumbers and more chili crisp.

Notes

You don't need to make this with the Argentinian Red Shrimp but it's my favorite. You can substitute almost any protein here. Also, if you can't find tahini at Trader Joe's, you can simply use some peanut butter if you want.
