Trader Joe's easy Chicken Satay and Peanut Sauce

This easy hack using all Trader Joe's ingredients to make a quick and easy Chicken Satay with peanut dipping sauce

- 1.5 pounds Boneless Chicken Thighs or Breast
- 1 Bottle Trader Joe's Thai Yellow Curry Use half a bottle or whatever you like
- 1/2 cup Trader Joe's Creamy Peanut Butter
- 2 tbsp Lime Juice
- 1 tbsp Finely Chopped Shallot
- 1 tsp Trader Joe's Curry Powder
- 1 tsp Trader Joe's ketchup
- 1 tbsp Trader Joe's Soy Sauce Or Fish Sauce
- 1 tbsp Trader Joe's brown sugar
- 1/2 cup water
- 1/2 cup Chopped Trader Joe's Blister Peanuts
Cut the chicken into strips or 1" cubes. Whatever way you like.
Put chicken and bowl and cover with Trader Joe's Yellow Curry Sauce and cover and put in the fridge. Can do this 1/2 hour ahead or even over night.
When ready, put chicken on skewers, leaving a few inches at one end to grab them by
Grill the satay for about 5 minutes or more on each side
Sprinkle chopped peanuts on top before serving
Instructions for Peanut Sauce
Put the peanut butter, lime juice, shallot, curry powder, ketchup, soy sauce, brown sugar and yellow curry sauce (1 tbsp) and water into a bowl and mix until smooth. If it is too thick, add more water until desired consistency. If too thin, add a tiny bit of peanut butter until it thickens up again.
Serve on the side with the Satay.
This is a quick and easy dinner for the whole family. The hardest part about making this is the peanut sauce, but it's really not that hard. You can adapt this to pork quite easily. Beef Satay is a bit different so I wouldn't use beef with this curry.
Serve with freshly made Trader Joe's Jasmine Rice or use the frozen Trader Joe's rice for even a quicker meal. I like to saute some green beans or bok choy as a side dish. Just use oil, garlic and soy sauce for a quick and easy preparation. Enjoy!
