Trader Joe’s Cornbread Bites with Pepper Jack Cheese and Serrano Chile Peppers Review – Trader Joe’s is exceptionally good at doing one thing and that is providing us with an endless supply of new and interesting appetizers. If it seems like I review a lot of appetizers, that’s because it’s true! Most of their stock doesn’t turn over nearly as quick as the appetizers. Trader Joe’s seems to be in love with cauliflower and corn right now and it’s all because it’s great for vegan and vegetarian food ingredients.

These are easy enough to make, just pop them in a 400 degree oven for 12-15 minutes until they look golden brown on the outside. You need to let them cool for a while because they are molten lava on the inside with all that melted cheese. Don’t ask me how I know this. I didn’t burn all my tongue so I was able to solider on and do the real tasting.

You have to be careful with these when you pull them off whatever you are baking them on. You might want to use parchment paper to bake them. A couple of mine stuck to the sheet and they just fell apart. They are pretty soft. The ones that didn’t fall apart didn’t seem to have a very firm crust on them like I was expecting. Maybe I needed to bake them a little longer? Once the rest of them cool off, I could give them a serious taste and I quite like them! They are like a mild version of a jalapeno popper. Corn and gooey cheese with a good chile pepper flavor. There are whole corn kernals. The exterior was like corn flour and like I mentioned, I thought should be crispier but that could just be me. They were hard to pick up.

At the end of the day, I’m not sure I would buy these again. I really like them and maybe I might buy them on taco night as a side dish. Make sure they are baked so the skin is firmer. The flavors were great and there was plenty of cheese. Unfortunately, each one is 110 calories! Yikes and I ate four of them just tasting. The whole box is over 1000 calories.
