Trader Joe’s Frozen Spinach Lasagna Review – This is going to sound weird. You probably realized that I shop at Trader Joe’s almost daily. I have four hungry mouths to feed (plus two dogs) and we buy a lot of food at Trader Joe’s. I spend hundreds of dollars a month there. I probably buy 80% of my groceries there. It might shock you to hear this is probably the most frequent item I buy at Trader Joe’s. You might ask why is that? Well, it’s because Mrs. Club Trader Joe’s absolutely LOVES Trader Joe’s Spinach Lasagna for lunch.
I guess it’s a testament to how good this is because it’s been in frozen section for as long as I’ve been shopping there. I keep expecting it to disappear someday, but every time I go it’s still there. It’s been there for at least 15 years. It never changes. The label is still the same. It’s just about the most perfect thing for lunch. It’s frozen so if you just bring it to work and stick it in your backpack, it won’t thaw out before lunch. Just stick it in the microwave for 5-6 minutes and you have great filling, vegetarian, hot lunch!
If you love spinach, you’ll love this. Spinach is the number 1 ingredient on the list. After you cook it and start eating it you’ll see what I am talking about. It’s just packed full of spinach. This couldn’t be simpler. It’s basically spinach, noodles, tomato sauce, ricotta, mozzarella, onion, oil and garlic. I don’t know how much closer to clean food you can get to that! If there is one thing I would want more of is more cheese. As far as I am concerned, there isn’t enough cheese, ever. Period.
I have never baked it because it seems like a waste of time and energy if you have a microwave oven, but the instructions are on there and if you really want to use an oven, it’s going to take 40 minutes or more. Just use the microwave. The difference isn’t worth the hassle. The real beauty of this is being able to take it to work where you likely don’t have access to an oven.
Mrs. Club Trader Joe’s thinks this is her favorite dish from Trader Joe’s. I can’t argue with that. It would be a sad day for our household if it ever went away. With Trader Joe’s, you can never say never. Keeping fingers crossed!
