Trader Joe’s Potato Gnocchi

Crafting this luscious Tuscan gnocchi bake becomes a breeze with Trader Joe’s ingredients. Start with their shelf-stable potato Gnocchi (you might try their cauliflower gnocchi too!), a perfect base that promises to soak up all the flavors you’ll layer on. For the heart of this dish, the sundried tomato pesto, the Pesto Rosso made from sundried tomatoes, oil, basil and cashews. This blend will create a pesto bursting with tangy and sweet notes, ideal for coating your gnocchi evenly.

For the preparation, first preheat your oven to a cozy 425°F . While it’s warming, boil the gnocchi according to the package instructions—usually just a few minutes until they float to the top of the water. Drain them and set aside. Put the spinach on the bottom of the baking dish. Toss the boiled gnocchi in the pesto and cream, ensuring each piece is well-coated. Transfer the gnocchi to a baking dish, perhaps adding a sprinkle of Trader Joe’s Quattro Formaggi, a four-cheese blend that melts beautifully, for an extra touch of indulgence. Bake until the top is golden and bubbly, about 20-25 minutes. This dish, rich in flavors and simplicity, showcases how Trader Joe’s ingredients can elevate your cooking to create comforting, delicious meals.

You can substitute almost any of the pesto sauces that Trader Joe’s sells in this recipe. Basil Pesto would work well as would the roasted pepper and almond one. Same with the cheese, you pick the cheese you want, but I would steer away from soft cheeses. Cheddar and mozzarella work well here.
