  • 1 2 quart pot
  • 1 9×9 baking dish

Ingredients
  

  • 2 Packages Trader Joe's Potato Gnocchi
  • 1 1/4 Cups Heavy Cream
  • 2 tbsp Trader Joe's Pesto Rosso Sundried Tomato Pesto
  • 1 bag Trader Joe's Baby Spinach
  • 90 grams Trader Joe's Sundried Tomato Strips This is one package
  • 2 cups Trader Joe's Quattro Formaggio Can you cheese of your choice
  • 2 tbsp Chopped Basil Optional

Instructions
 

  • Heat oven to 425 degrees
  • Cook Gnocchi in a large pot of salted water, for about five minutes until they float. Drain.
  • Add cream, sundried tomato pesto to a large skillet or pot. Heat on low until completely warmed up. Add the gnocchi until coated.
  • Cover the base of an 8 cup (9×9) ovenproof baking dish with the spinach.
  • Top the spinach with half the sundried tomatoes
  • Pour the gnocchi mix over the spinach and tomatoes
  • Top the gnocchi with the remaining sundried tomato strips and the cheese
  • Bake for 10-15 minutes until bubbly and top is speckled golden brown.
  • Sprinkle chopped basil on top and serve!

Notes

You can substitute almost any of the pesto sauces that Trader Joe’s sells in this recipe. Basil Pesto would work well as would the roasted pepper and almond one. Same with the cheese, you pick the cheese you want, but I would steer away from soft cheeses. Cheddar and mozzarella work well here.
