Trader Joe’s sure is going on a vegan kick of late and it shows with products like this Tofu “Scramble” with fake soy “Chorizo” but you have to give it to Trader Joe’s for sticking to their guns on this Vegan kick. At first, I thought it would be a fad but it seems like we are going to have vegan food for many years to come as vegan foods get better and better. The fake meat gets tastier and tastier. I think this is a good example of the progress these food companies are making.

If you’ve ever been to a Mexican restaurant for breakfast or brunch, you’ll have probably run across some type of egg scramble with sausage and peppers and tomatoes. I really like these scrambles. They are a good departure from the normal eggs and toast breakfast that I normally have. Even better that it’s vegan (although as a meat-eater, I’ll never give up my eggs).
 
I try to flex as much into vegetarian or vegan food all the time. This dish is a frozen one and it’s meant for a single serving. They suggest two methods to make this. Microwave it in the dish or take it out of the dish and bake in a dish you can put in the oven. Based on my experience, I would take this out of the paper dish and microwave it in its microwave-safe dish.
 
The problem is that the vegan “cheese” is cooked and stuck to the paper dish. I think I lost 50% of the vegan cheese to the paper bowl! The dish is not very strong and it got soggy as I was eating it. So, there is that. So, just take it out of the packaging and put it in a real bowl when you cook it.

But in terms of the flavor, I really liked it. The texture was good. I didn’t think it was too far off from a real egg scramble. The fake Chorizo was pretty authentic. It had a nice spicy kick and a deep depth of smokey flavor. It was quite filling and I really enjoyed it. I wanted to put it in a tortilla and make a burrito out of it. But we have to talk about the skeleton in the closet. The sodium.
 
The single-serving package lists the sodium content in this entrée at 980 milligrams, which is 43% of the recommended salt intake for one day (based on the standards set by the U.S. Food & Drug Administration). Considering that the American Heart Association says that we eat nearly twice the amount of salt that we should, it’s rough to start the day with a breakfast dish that contains such a high level.
 
Would I buy it again? Yes, I thought it was good! At $3.99 it isn’t too bad at 370 calories and filled me up. I will give it 8 Bells!
