As with most of the best vegetarian food at Trader Joe’s, this is in the freezer section with the rest of the vegetarian food. I was intrigued by it because it wasn’t your typical Indian dish but supposedly inspired from West Africa. It contains kale, garbanzo beans and peanuts over couscous. I saw some tomatoes in there too.
Its pretty simple to prepare. Stick it in the microwave for a couple minutes. The couscous is separate from the main dish. After cooking I just put the couscous in a bowl and dumped the greens, beans and sauce over it. It isn’t the most appealing dish visually but it does make it up in flavor. The couscous came out perfectly cooked and fluffy. In fact I quite enjoyed the flavors of this dish. A moderate amount of heat. The flavors reminded me of a little of Thai food with the heat, peanuts and use of spices. I liked the kale quite a bit and the peanuts and garbonzos give you a fair amount of protein to keep you satisfied.

If you are looking for a quick vegetarian lunch or dinner with some exotic flavors and don’t mind a little heat, this might be a perfect meal for you. I found it satisfying and easy to make. At 280 calories, it wasn’t quite enough for me to be satisfied, but if you are smaller than me, go for it! I recommend it at 8 Bells!
